Quick Salad for Busy Days!

Two magazines to edit, recipes to develop, articles to write, translations to finish, administration to do, family to take care of, meals to plan, house and garden to clean, pile of laundry to fold, dog to cook for (yes, you read right), dinner parties and Christmas getaways to plan ... and that's just the tip of the iceberg!
Busy indeed, but not too busy to take care of myself. Here is a quick and healthy salad (one of the many I love to make) that helps me get through busy afternoons. That, plus a few gallons of green tea! 

Serves 1

torn leaves of lettuce
cooked lentils
thinly sliced duck breast
cherry tomatoes
1/2 tbsp sherry vinegar
1 1/2 tbsp good olive oil
1/4 tsp Dijon mustard
salt & pepper to taste
boiled egg

Arange the salad leaves on a plate. Top with the lentils, duck breast and tomatoes. Make a dressing by whisking the vinegar, oil, mustard and salt & pepper. Pour over the salad. Top with the egg and finish with a sprinkle of fresh pepper.
