Last Friday I made an incredibly easy pea soup for lunch and promised to post the recipe here. The soup was made with frozen peas, a product which I think is as essential as garlic. Why? Well, because when there's not much in the house, you can rest assured that a delicious soup is but a mere ten minutes away! Here's the recipe.
Pea and Garlic Soup
Serves 1-2
1 tbsp mild olive oil
1 shallot, finely chopped
2 cloves of garlic, finely chopped
200g frozen peas
1 tsp dried basil
500ml chicken stock
good extra virgin olive oil, for drizzling
freshly ground pepper
Heat the oil in a pan and gently sweat the shallots and garlic. Add the peas, the basil and the stock. bring to the boil, reduce the heat to a simmer and allow to cook for 8-10 minutes. Puree the soup in the blender and serve with a drizzle of good olive oil and some freshly cracked pepper. Now how easy was that!
