Oeuf Cocotte


We all have a day off here as it is Ascension Thursday so I thought I'd start the day with a nice breakfast. This recipe is one which I recommend you all try. It is so beautifully simple and so delicious. Certainly one to serve when you're out to impress.

It's a very easy thing to make:

Preheat oven to 220C. Take a ramequin and grease it with a little olive oil. Add a layer of finely chopped veggies (I used spring onions and cherry tomatoes), follow with a little bit of cream cheese or creme fraiche (in my case, some peppery cream cheese), break in an egg, top with some s/p and some herbs (I used oregano). Put the ramequins in a tray and fill that with boiling water, about half way up the ramequins. Pop in a warmed oven for 10-15 minutes and serve with some cheese and some more spices. I finished it off with some parmesan, a tiny sprinkling of sweet paprika powder and a little finely chopped parsley.

Serve with some pain de campagne and you have a gorgeous breakfast!


NOTE:
The beauty of the dish is that you can add just about anything, different veggies, cheeses, etc. I got this recipe from Chocolate and Zucchini.

Paola we off down the coast tomorrow morning for the weekend and had one breakfast unplanned so this is the breakfast for Sunday, nice and quick and very different and dont have to buy anything extra as I have all the ingredients. Thanks for sharing.

That's a great idea, Paola. I love trying different things with eggs. And this is something I could make with all local ingredients from the farmer's market _ eggs, cheese and veggies _ always a plus.

(And I know you have strong feelings about the concept of diets but this strikes me as just the sort of light, nutritious breakfast I could eat while trying to lose weight and not feel deprived.)

Oh I had the same thought as you! You're right, diets are not my thing, but this is certainly a dish that won't hurt the waistline and that's only a good thing! I'll be repeating this one also because of that reason! BTW, I highly recommend the recipes in Chocolate and Zucchini. I have noticed that Clotilde uses very little fat in her cooking and everything is very much in moderation. Very French indeed! I made a quiche today which only called for 2 tbsps of creme fraiche and two eggs...pretty good for a quiche I think!

I'm sure you'll love these eggs!
