It's cold, it's rainy, and I have an hour to kill. Baking time! Here's what I created in less than half an hour. Just in time to welcome Kirstie home from school. PS: The house now smells like heaven.
Chase Away the Rainy Day Muffins
250g all-purpose flour
2 tsps baking powder
1/2 tsp baking soda
pinch of salt
150g cinnamon chips
70g chocolate chips2 tbsps sunflower oil
70g raw cane sugar
30g light caster sugar
2 eggs
1 1/2 tsp vanilla extract
2 ripe, mashed bananas
130 g creme fraiche
Preheat the oven to 180C and line a muffin pan with liners or prepare with butter and flour. In a large bowl, mix the flour, baking powder, baking soda, salt, cinnamon chips and chocolate chips. In a small bowl, whisk the mashed bananas, oil, sugars, eggs, vanilla extract and creme fraiche. Pour the wet ingredients into the dry and combine with a wooden spoon. Do not beat vigorously! Just combine. Divide the batter over the muffin pan and bake for about 20 minutes or until a skewer inserted in the center comes out clean.
Allow to cool briefly and enjoy!
