Baked Camembert

The weather forecast for the end of the week predicts that the temperatures will drop and it will get COLD! This weekend the daytime highs are expected to reach anywhere between 2-5C. Not freezing perhaps, but cold enough to warrant comfort food. 
One of my favorite treats at this time of year is my baked camembert. So easy to make, so delicious and so much 'comfort' in that one little box! Wrap yourself in a warm blanket, cuddle up with someone special and enjoy this ultimate pleasure with a nice bottle of a fleshy sauvignon blanc or a dry rosé.

Baked Camembert
Serves 2

1 camembert of 250g, in its box
few sprigs of thyme, leaves plucked
1 clove of pink garlic, thinly sliced
fleur de sel
freshly-ground pepper
good quality extra vigin olive oil

Preheat oven to 200C. Take the cheese out of its foil package and put it back in the box. Carefully cut of the cheese's top layer. Sprinkle with the thyme, pierce with the sliced garlic and season with salt, pepper and olive oil. Put the lid back on the cheese box and wrap the box loosely in aluminum foil. Place the cheese on a baking tray and bake for 10-15 minutes. Serve with fresh, crusty bread or crisp vegetables.
